Vegan “m&m” cookies! I used Unreal Snacks vegan dark chocolate quinoa candies and they tasted amazing and worked so well! This particular batch also had some chocolate sprinkles in it.
Ingredients 1 flax egg (1T ground flax mixed with 3T water)
1 and 1/2 cups brown rice flour
1/2 teaspoon baking soda
pinch of salt
1/2 cup vegan butter
3/4 cup of sugar
1/2 teaspoon vanilla extract
1/2 cup Unreal Snacks dark chocolate quinoa gems
2-4 tablespoons non-dairy milk
-Preheat oven to 350°. -Mix the flax egg and let it sit for 10 minutes or until gooey consistency is reached. -Add flour, baking soda, and salt to a bowl and mix. -In a separate bowl mix together melted vegan butter, sugar, and vanilla extract. -Add the bowl of wet ingredients + flax egg to the dry and mix until a dough has formed, if it’s still too dry add some non-dairy milk 1 tablespoon at a time until it’s a scoopable consistency and then fold in chocolates. -Bake for 12-14 minutes.
