This vegan tzatziki sauce is super simple to make at home, not to mention delicious and made with coconut cream! I love using it as a sauce for rice dishes or as a chip dip.
Ingredients
1/2 a cucumber
1 can of full fat coconut milk
1 & 1/2 tablespoons lemon juice
1 teaspoon garlic powder
1 tablespoon dried dill
1/2 teaspoon pepper
salt to taste
-Peel, grate, and squeeze as much liquid as possible from the cucumber. Add it to a bowl.
-Add all the cream plus 1 tablespoon of the liquid from the can of coconut milk to the bowl.
-Add in the rest of the ingredients and mix everything all up and then chill before serving!
Notes:
Put the can of coconut milk in the fridge for at least a few hours to separate the cream to the top of the can.
