This recipe is a recreation of the chickpeanut burger I always used to eat from Veg Out (an old vegan restaurant that closed in my city), but instead of making a burger I made a chickpeanut mixture to add to my rice and greens!
Ingredients 1 small onion 1 teaspoon oil 1/3 cup chickpeas 1 teaspoon oil 1/4 teaspoon salt 1/4 teaspoon garlic powder 1/4 cup green peas 1-2 tablespoons peanut butter 1 cup spring mix/greens 1 cup cooked rice 2-3 tablespoons chipotle sour cream (I blended a few chipotle peppers in adobo into my homemade sunflower seed sour cream) 1 pickle
-Cut onion up into thin strips. -Add onion to pan on medium-low heat with 1 teaspoon oil. -Mix the onions around every 5 mins or so and turn down the heat if they start to burn. Cook until they start to caramelize. -Add chickpeas to a pan on medium-high heat with 1 teaspoon oil and salt & garlic powder. Cook for a few minutes. -Turn heat down to medium-low and add peas. Put a lid on and leave it for a few minutes to cook if your peas are frozen. -Once cooked, add chickpea and pea mixture to a bowl and mix in peanut butter. -Assemble by adding spring mix to a plate, top with rice, add your chickpeanut mixture, then top with chipotle sour cream, caramelized onion, and a sliced pickle. -Enjoy!
Notes:
It would also be good with some diced tomato, but I was out!
