I've always wanted to try making pepperoni out of beets since I'm not a huge fan of vegan meats. These do not taste like beets after cooking, so even if you don't like beets, you might like these! You can watch the video of me making my beet pepperoni pizza HERE!
Ingredients
1 beet
1/3 cup tamari or soy sauce (if you're not gluten-free)
1/2 teaspoon liquid smoke
1 teaspoon maple syrup
1/2 teaspoon cayenne pepper
1 teaspoon dry mustard
1 & 1/2 teaspoons ground fennel
1 teaspoon smoked paprika
1 teaspoon garlic powder
fresh cracked black pepper (~1/2 teaspoon)
-Wash, peel, and carefully cut your beet into thin, circular slices. (A mandolin would work best for this.)
-Add all of the other ingredients into a bowl and mix it all up.
-Add the beet slices into the marinade. If the beets aren't fully submerged, add a little water to it.
-Put the marinating beets in the fridge for at least 30 minutes. They will soften up.
-Put the beets on a pizza.
-Cook the pizza for 10 minutes, remove from oven and brush more marinade over the beets.
-Place back in the oven for 5 minutes.
-Brush marinade over the beets again and bake for about 5 more minutes or until your pizza is done.
-Save leftover marinade for up to 5 days in the fridge if you want to use it again.
